This viral cottage cheese flatbread is a 2-ingredient wonder that’s soft, protein-rich (around 25 grams per serving!), and ridiculously easy to make in 15 minutes.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Add the cottage cheese and egg to a blender or food processor. Blend for 30-60 seconds until completely smooth and creamy with no visible cottage cheese curds.
Pour the smooth mixture onto your prepared baking sheet. Using a spatula, spread it into a circle about 8-10 inches wide and ¼ inch thick.
Bake for 12-15 minutes until the edges are golden brown and the center feels set when lightly touched.
Let cool for 2-3 minutes before adding toppings or slicing.
