  • 2 ripe pears, sliced 1/8-inch thick
  • 4 oz Gorgonzola cheese, crumbled
  • 1/4 cup honey
  • 1/4 cup chopped walnuts
  • A handful of arugula leaves
  • 1 tablespoon olive oil
  • Freshly cracked black pepper

Instructions

  1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. If using puff pastry: Roll out on floured surface and place on baking sheet. If using flatbread: Place directly on sheet.
  3. Drizzle olive oil evenly over the flatbread base for optimal flavor and crispiness.
  4. Arrange pear slices in slightly overlapping rows across entire surface for elegant presentation.
  5. Scatter crumbled Gorgonzola cheese evenly over pears, using about 1/2 oz per section.
  6. Bake for 15-20 minutes until edges are golden brown and cheese bubbles actively.
  7. Remove from oven and let cool for 2-3 minutes for easier handling.
  8. Drizzle honey over warm flatbread, then top with walnuts, arugula, and black pepper. Serve immediately.

Notes

  • Use Anjou or Bartlett pears that yield slightly to pressure but hold shape when sliced. Pat pears dry if very juicy to prevent soggy base.
  • Pre-bake pastry for 5 minutes before adding toppings for extra crispiness. Room temperature Gorgonzola crumbles and melts better.
