A creamy and hearty soup loaded with potatoes, cheese, bacon, and green onions. Perfect comfort food ready in under an hour.

Ingredients

  • 6 medium russet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 4 cups chicken broth (or vegetable broth for vegetarian)
  • 2 cups milk (whole or 2%)
  • 1 cup heavy cream
  • 4 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups shredded cheddar cheese
  • 6 slices bacon, cooked crispy and crumbled
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped green onions for garnish

Instructions

  1. Place diced potatoes and chopped onion in large pot. Add chicken broth and bring to boil. Reduce heat and simmer 15-20 minutes until potatoes are soft.
  2. In small saucepan, melt butter over medium heat. Whisk in flour until smooth paste forms. Cook 1-2 minutes, then slowly add milk while whisking constantly until thickened (3-5 minutes).
  3. Pour milk mixture into potato pot. Stir in heavy cream, garlic powder, salt, and pepper. Use potato masher to gently mash one-third of potatoes for thickness while leaving chunks.
  4. Remove from heat and let cool 2-3 minutes. Stir in shredded cheddar cheese and sour cream until smooth and creamy. Taste and adjust seasoning.
  5. Ladle into bowls and top with crumbled bacon, extra cheese, green onions, and sour cream if desired.

Notes

  • Use starchy potatoes like russet or Yukon Gold for best creaminess. Don’t skip the roux for silky texture.
  • Always let soup cool slightly before adding cheese to prevent graininess. Can be made day ahead and reheated gently.
