Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 1/2 cup mayonnaise
  • 3 tbsp honey
  • 3 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 12 slider buns
  • 1 cup shredded lettuce
  • 1/2 red onion, thinly sliced
  • 4 slices Swiss cheese, cut into quarters

Instructions

  1. Season the chicken breasts evenly with salt, black pepper, garlic powder, and paprika on both sides.
  2. Heat olive oil in a large skillet over medium-high heat for 2 minutes until shimmering. Add chicken and cook for 6-7 minutes per side until internal temperature reaches 165°F and juices run clear.
  3. Transfer cooked chicken to a cutting board and let rest for 5 minutes to retain juices.
  4. While chicken cooks, whisk together mayonnaise, honey, Dijon mustard, apple cider vinegar, salt, and pepper in a small bowl until smooth.
  5. Slice the rested chicken into thin strips or shred it with two forks for easy assembly.
  6. Slice slider buns in half and lightly toast the cut sides in a dry skillet for 1-2 minutes if desired.
  7. Spread honey mustard sauce generously on both the top and bottom halves of each bun.
  8. Place 2-3 ounces of sliced or shredded chicken on the bottom half of each bun.
  9. Top each slider with a quarter piece of Swiss cheese, followed by shredded lettuce and a few slices of red onion.
  10. Place the top bun on each slider, press gently, and serve immediately with extra honey mustard sauce on the side for dipping.

Notes

  • Chicken thighs can be substituted for breasts if you prefer darker meat with more fat content.
  • For a spicier version, add a pinch of cayenne pepper to the honey mustard sauce.
  • Don’t skip the resting period after cooking – it keeps the chicken juicy and flavorful.
  • Toast the buns to prevent them from getting soggy from the sauce and toppings.
  • Store components separately for best results when meal prepping.
