  • 1 lb ground beef
  • 12 oz bowtie pasta (farfalle)
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste
  • 1/4 cup pasta water (reserved)

Instructions

  1. Cook the bowtie pasta according to package directions in a large pot of salted boiling water. Before draining, reserve about 1/4 cup of the starchy pasta water, then drain the pasta and set aside.
  2. While the pasta is cooking, heat a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and no pink remains (6-8 minutes). Drain off any excess fat.
  3. Reduce the heat to medium-low. Add the butter, minced garlic, dried oregano, and optional red pepper flakes to the skillet with the beef. Cook for 1-2 minutes, stirring constantly, until the garlic is fragrant and the butter has melted.
  4. Add the cooked and drained bowtie pasta to the skillet. Pour in the reserved pasta water and toss everything together to coat the pasta in the sauce. Let it simmer for 1 minute to allow the flavors to meld.
  5. Remove the skillet from the heat. Stir in the grated Parmesan cheese and fresh parsley. Season with salt and black pepper to taste.
  6. Serve immediately while hot.

Notes

  • Substitute ground turkey or chicken for a leaner option. Add vegetables like diced onions or bell peppers with the garlic for extra nutrition.
  • If sauce is too thick, add more pasta water until it reaches desired consistency. Don’t rinse cooked pasta as the starch helps sauce cling.
  • For extra flavor, use garlic-infused butter or add a splash of white wine to deglaze the pan after cooking beef.
