  • 1 pound boneless, skinless chicken breasts or thighs
  • 2 cups pasta (penne or rotini work well)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup bell peppers, sliced (any color)
  • 1 medium onion, chopped
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Place chicken breasts or thighs in the bottom of the slow cooker in a single layer.
  2. Sprinkle chopped onion and sliced bell peppers evenly over the chicken.
  3. Mix Cajun seasoning, garlic powder, onion powder, salt, and pepper in a small bowl. Sprinkle over chicken and vegetables.
  4. Pour chicken broth and diced tomatoes with green chilies over the top, ensuring chicken is well coated.
  5. Cover and cook on low for 4-6 hours or on high for 2-3 hours until chicken reaches 165°F.
  6. About 30 minutes before serving, cook pasta according to package directions to al dente. Drain and set aside.
  7. Remove cooked chicken from slow cooker and shred with two forks. Return to pot.
  8. Pour in heavy cream and stir to combine. Cook on high for 10-15 minutes until sauce thickens.
  9. Add cooked pasta to the slow cooker and stir gently to coat with sauce.
  10. Stir in Parmesan cheese if desired. Garnish with fresh parsley and serve hot.
