Experience a fiesta of flavors with grilled honey lime chicken layered over jasmine rice and a fresh avocado mix. Beginner-friendly recipe ready in about 90 minutes including marinating.
In a mixing bowl, combine honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper to create a marinade. Whisk until the honey dissolves and the mixture looks glossy and uniform.
Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over the chicken. Seal or cover and refrigerate for at least 30 minutes, up to 2 hours.
While the chicken marinates, rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, bring the chicken broth to a boil. Add the rice, cover, and reduce heat to simmer. Cook for about 15 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and let rest covered for 5 minutes.
Preheat a grill or stovetop grill pan over medium-high heat for about 5 minutes. Remove the chicken from the marinade, allowing excess to drip off before placing it onto the hot grill surface.
Grill the chicken for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C). Remove from heat and allow to rest for 5 minutes before slicing.
In a bowl, combine diced avocado, red onion, fresh cilantro, and olive oil. Gently toss until everything is evenly distributed and the avocado remains intact.
To assemble the stack, layer a serving of rice at the base. Top with sliced chicken and then spoon over the avocado mixture.
Serve with lime wedges and additional cilantro for garnish, if desired, and let everyone squeeze on extra citrus for that final zing.
Notes
Marinate chicken for full 2 hours for enhanced flavor. Use freshly squeezed lime juice for best taste.
If jasmine rice is unavailable, substitute with basmati or your favorite rice. Extra marinade can be heated and drizzled over the stack for added flavor.
Allow chicken to rest after grilling to retain juices. Assemble just before serving for optimal freshness.
Total time includes 30 minutes minimum marinating time. Active cooking time is about 45 minutes.
