Quick and easy Tuscan Garlic Chicken Pita Pizzas made with pita bread, tender chicken, spinach, and a creamy garlic sauce. Perfect weeknight dinner.

  • 4 whole wheat pitas
  • 1 cup cooked chicken, shredded or diced
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated
  • 1/4 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix together Greek yogurt, minced garlic, olive oil, Italian seasoning, salt, and black pepper until well combined.
  3. Place pitas on the prepared baking sheet and spread a thin layer of the garlic sauce on each pita.
  4. Top each pita with chicken, spinach, sun-dried tomatoes, and red onion, distributing evenly.
  5. Sprinkle mozzarella and parmesan cheese over the top of each pita pizza.
  6. Bake for 10-12 minutes, or until cheese is melted and bubbly and pitas are crispy around the edges.
  7. Remove from oven, let cool for 2-3 minutes, and serve warm.

Notes

  • Use rotisserie chicken to save time and add extra flavor.
  • For a vegetarian version, omit the chicken and add more vegetables like bell peppers or mushrooms.
  • If you prefer a thinner crust, you can split the pitas in half horizontally before adding toppings.
  • Don’t overload the pitas with toppings or they may become soggy.
