- 1 pound lean ground beef
- 8 ounces penne or fusilli pasta
- 1 cup heavy cream (or half-and-half)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup low-sodium vegetable broth
- 1 cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
- Heat olive oil in large skillet over medium heat. Sauté diced onion for 5 minutes until translucent.
- Add minced garlic and cook 1 minute until fragrant.
- Add ground beef, breaking apart as it cooks. Cook 6-8 minutes until completely browned. Season with salt and pepper.
- Meanwhile, boil salted water and cook pasta until al dente according to package directions. Drain and set aside.
- Pour vegetable broth into skillet with beef. Simmer 2 minutes, scraping up browned bits.
- Reduce heat to medium-low. Stir in heavy cream and Italian seasoning. Simmer gently 3 minutes until slightly thickened.
- Stir in Parmesan cheese until completely melted and smooth.
- Add cooked pasta to skillet, tossing to coat evenly with sauce.
- Serve immediately with extra Parmesan on top.
Notes
- Fresh grated Parmesan melts smoother than pre-grated.
- Low-sodium broth allows better control of salt levels.
- Don’t overcook pasta – it should be al dente.
