Tender steak bites combined with roasted sweet potatoes and colorful peppers. Quick and nutritious meal ready in 31 minutes, perfect for weeknight dinners.

Ingredients

  • 1 lb. steak (such as sirloin or tenderloin), cut into bite-sized pieces
  • 2 medium sweet potatoes, diced
  • 1 bell pepper (red or yellow), sliced
  • 1 bell pepper (green), sliced
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss diced sweet potatoes with 1 tablespoon olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  3. Spread sweet potatoes on baking sheet in single layer. Roast for about 20 minutes or until tender and golden brown.
  4. While sweet potatoes roast, heat remaining 2 tablespoons olive oil in large skillet over medium-high heat.
  5. Season steak pieces with onion powder, salt, and pepper.
  6. Add seasoned steak to skillet and cook for 3 to 4 minutes, turning occasionally until browned and cooked to your liking (medium-rare to medium).
  7. Once steak is nearly done, toss in sliced peppers and saute for additional 2 to 3 minutes until slightly tender yet crisp.
  8. When sweet potatoes are done, mix them with cooked steak and peppers in skillet. Stir well to combine all flavors.
  9. Remove from heat, drizzle with extra olive oil if desired, and garnish with chopped parsley.
  10. Dish out onto plates and serve immediately while hot.

Notes

  • Use sirloin or tenderloin for most tender results. Cut all ingredients uniformly for even cooking.
  • Let steak rest at room temperature 10 to 15 minutes before cooking for more even results.
  • Don’t overcrowd baking sheet with sweet potatoes. Spread in single layer for best caramelization.
  • Use high heat for searing steak to develop beautiful crust while keeping interior juicy.
