Double-spicy bagels made with fresh jalapeños and dried red peppers. No cheese, just pure heat for spice lovers.

Ingredients

  • 1¾ cups lukewarm water
  • ½ teaspoon dry yeast
  • 2 teaspoons salt
  • 1½ tablespoons sugar
  • 5 cups flour (more if needed)
  • ⅓ cup jalapeños, chopped
  • ¼ cup dried red peppers

Instructions

  1. Mix lukewarm water, yeast, salt, and sugar in a large bowl until dissolved.
  2. Add flour and chopped jalapeños. Mix to form a ball.
  3. Knead for 10-12 minutes until smooth, adding flour as needed.
  4. Add dried red peppers and knead 3 more minutes.
  5. Let dough rest for 10 minutes.
  6. Cut dough into 12 pieces and shape each into a ring, securing the ends.
  7. Cover with damp towel and let rise 1 to 1½ hours.
  8. Bring water to boil. Boil bagels until they float (15-30 seconds).
  9. Remove and place on greased cookie sheet.
  10. Bake at 400°F (200°C) for 10-15 minutes until golden brown.
  11. Cool slightly before serving.

Notes

  • Makes 12 spicy bagels
  • No overnight fermentation needed
  • Best enjoyed fresh
  • Store in airtight container for 2-3 days
