  • 6 large carrots, peeled and chopped
  • 1 cup red lentils, rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon cumin
  • 1 teaspoon coriander
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté the onion for 4-5 minutes until soft. Add garlic and cook for 30 seconds until fragrant.
  2. Add the carrots, lentils, broth, cumin, and coriander to the pot. Stir to combine and bring to a boil over high heat.
  3. Reduce heat to low, cover, and simmer for 20-25 minutes, stirring occasionally, until carrots are fork-tender and lentils have broken down completely.
  4. Remove from heat and blend the soup until completely smooth using an immersion blender or regular blender (working in batches if needed).
  5. Season with salt and pepper to taste. If soup is too thick, add more broth 1/4 cup at a time until desired consistency is reached.
  6. Serve hot in bowls, garnished with fresh herbs or a dollop of yogurt if desired.
