Fork-tender beef brisket slow-cooked in rich savory gravy with minimal prep time. Perfect comfort food ready in 8-10 hours.

  • 45 pounds beef brisket, trimmed
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper, freshly ground
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup balsamic vinegar or red wine
  • 1/4 cup brown sugar
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 2 bay leaves
  • Fresh thyme sprigs

Instructions

  1. Pat brisket dry with paper towels. Mix salt, pepper, smoked paprika, onion powder, and garlic powder in small bowl. Rub seasoning generously over both sides of brisket.
  2. Heat olive oil in large skillet over medium-high heat. Sear brisket for 3-4 minutes on each side until golden brown crust forms. Remove and set aside.
  3. In same skillet, add sliced onions and garlic, cooking for 3 minutes until softened. Pour in beef broth and scrape up browned bits. Add balsamic vinegar, brown sugar, tomato paste, and Worcestershire sauce. Simmer for 2 minutes.
  4. Place seared brisket in slow cooker. Pour sauce mixture over meat. Add bay leaves and thyme sprigs. Cover and cook on low for 8-10 hours until fork-tender.
  5. Remove brisket from slow cooker and let rest for 10 minutes. Slice against the grain. Strain sauce if desired and serve over sliced brisket.

Notes

  • Choose well-marbled brisket for best flavor and tenderness. Searing adds depth, don’t skip this step.
  • For thicker gravy, whisk cornstarch with cold water and stir into sauce. Simmer 15-20 minutes on high.
  • Maple syrup can replace brown sugar. Use tamari instead of Worcestershire for gluten-free option.
