This Slow Cooker Apple Butter Glazed Pork Tenderloin is an easy and delicious weeknight meal. The pork is cooked to perfection in a slow cooker and glazed with a sweet and savory apple butter mixture.

Ingredients

Scale
  • 1 (1 to 1.5 pound) pork tenderloin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup apple butter
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar

Instructions

  1. Pat the pork tenderloin dry with paper towels and season all sides with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the pork tenderloin on all sides until deep golden brown, about 2-3 minutes per side.
  3. Transfer the seared pork to the slow cooker.
  4. In a small bowl, whisk together the apple butter, brown sugar, Dijon mustard, and apple cider vinegar until smooth.
  5. Pour about half of the glaze over the pork in the slow cooker, reserving the other half in the refrigerator.
  6. Cover and cook on low for 3-4 hours or on high for 1.5-2 hours, until the pork reaches an internal temperature of 145°F (63°C).
  7. Remove the pork from the slow cooker and let it rest for 10 minutes.
  8. Brush the reserved glaze over the rested pork tenderloin.
  9. Slice the pork into 1/2-inch medallions and serve with the cooking liquid from the slow cooker spooned over the top.

Notes

  • Use a meat thermometer to ensure pork reaches exactly 145°F to avoid overcooking and drying out the meat.
  • If your apple butter is very thick, add a tablespoon of water to thin the glaze.
  • Searing the pork before slow cooking adds significant flavor and is worth the extra step.
  • Let pork rest for the full 10 minutes to allow juices to redistribute for maximum tenderness.
