  • 8 ounces cream cheese, softened to room temperature (65-70°F)
  • 1 cup feta cheese, crumbled
  • 1/3 cup fresh chives, finely chopped
  • 1 1/2 cups dried cranberries
  • 4 large flour tortillas, 10 inches each

Instructions

  1. Place softened cream cheese in a medium mixing bowl and beat with electric mixer for 2-3 minutes until completely smooth and fluffy with no lumps visible.
  2. Fold in crumbled feta cheese, chopped chives, and dried cranberries using a spatula. Mix gently until evenly distributed with red cranberries and green chives scattered throughout.
  3. Lay one tortilla flat and spread about 1/2 cup filling evenly across surface, leaving 1/2-inch border on all sides. Use offset spatula for even layer.
  4. Starting from one edge, roll tortilla tightly but gently, keeping filling contained. If tortilla cracks, warm 10 seconds between damp paper towels in microwave.
  5. Wrap each roll individually in plastic wrap, twisting ends to seal. Refrigerate for at least 1 hour until firm for clean slicing.
  6. Using sharp serrated knife, slice each roll into 1/2 to 3/4 inch thick rounds using gentle sawing motion. Clean knife between cuts for neatest presentation.
  7. Arrange slices on serving platter. Take out 15 minutes before serving for optimal texture if desired.

Notes

  • Remove cream cheese from fridge 2-3 hours before use for optimal softening to 65-70°F. Taste filling before rolling and adjust feta if too salty.
  • Can be prepared up to 24 hours in advance. Store wrapped rolls in 9×13 inch airtight container and slice just before serving for freshest presentation.
  • If tortillas crack when rolling, warm briefly between damp paper towels. For leaking filling, use less mixture and ensure proper border size.
