  • 1 cup feta cheese (goat cheese can be substituted)
  • 2 tablespoons honey (maple syrup can be used)
  • 2 tablespoons parsley, freshly chopped

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and peel the sweet potatoes, then slice them into uniform 1/2-inch thick rounds.
  3. In a large mixing bowl, combine sweet potato rounds with olive oil, salt, black pepper, and smoked paprika. Toss to coat evenly.
  4. Spread the sweet potato rounds in a single layer on the baking sheet, making sure they don’t overlap.
  5. Roast for 25-30 minutes, flipping halfway through until golden brown and crispy on the edges.
  6. Remove from the oven and let cool for about 5 minutes.
  7. Transfer sweet potato rounds to a serving platter.
  8. Sprinkle crumbled feta cheese over the warm rounds.
  9. Drizzle honey evenly over the feta-topped sweet potato rounds.
  10. Garnish with freshly chopped parsley before serving.
