Discover the perfect balance of flavors with Roasted Sweet Potato Rounds with Honey & Feta, a healthy and delightful side dish that marries sweet and savory beautifully.
1 cup feta cheese (goat cheese can be substituted)
2 tablespoons honey (maple syrup can be used)
2 tablespoons parsley, freshly chopped
Instructions
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Wash and peel the sweet potatoes, then slice them into uniform 1/2-inch thick rounds.
In a large mixing bowl, combine sweet potato rounds with olive oil, salt, black pepper, and smoked paprika. Toss to coat evenly.
Spread the sweet potato rounds in a single layer on the baking sheet, making sure they don’t overlap.
Roast for 25-30 minutes, flipping halfway through until golden brown and crispy on the edges.
Remove from the oven and let cool for about 5 minutes.
Transfer sweet potato rounds to a serving platter.
Sprinkle crumbled feta cheese over the warm rounds.
Drizzle honey evenly over the feta-topped sweet potato rounds.
Garnish with freshly chopped parsley before serving.
Notes
For the crispiest results, make sure sweet potato rounds are sliced uniformly at 1/2-inch thickness. Pat them dry before tossing with oil if they seem wet.
The feta can be substituted with goat cheese for a milder, creamier flavor. Maple syrup works as a vegan alternative to honey.
These rounds are delicious served warm or at room temperature, making them perfect for parties and potlucks.
