Crispy edged, golden brown sweet potato rounds coated in olive oil, salt, pepper, and smoky paprika, roasted to tender perfection. Perfect appetizer or side dish ready in under an hour.

  • 2 large sweet potatoes, washed and scrubbed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ¾ cup crumbled feta cheese
  • ¼ cup honey
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice sweet potatoes into ½ inch thick rounds for uniform thickness.
  3. In a large bowl, toss sweet potato rounds with olive oil, salt, black pepper, and smoked paprika until evenly coated.
  4. Arrange sweet potato slices in a single layer on the prepared baking sheet without overlapping.
  5. Roast for 25 to 30 minutes, turning halfway through, until tender and golden brown.
  6. Remove from oven and allow to cool slightly on the baking sheet.
  7. Arrange roasted sweet potato rounds on a serving platter.
  8. Sprinkle crumbled feta cheese generously over the rounds.
  9. Drizzle with honey.
  10. Garnish with freshly chopped parsley and serve warm or at room temperature.

  • Choose sweet potatoes similar in diameter for even cooking.
