  • 3/4 cup milk, warmed to about 110°F
  • 2 1/4 teaspoons active dry yeast
  • 1 large egg, room temperature
  • 1/4 cup (50 g) granulated sugar
  • 1 teaspoon kosher salt
  • 3 cups (375 g) all-purpose flour
  • 1 cup (226 g/2 sticks) unsalted butter, cold
  • 4 tablespoons butter, room temperature (for filling)
  • 1/2 cup (100 g) packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon orange zest
  • 1 teaspoon cardamom
  • Pinch kosher salt
  • 2 cups confectioner’s sugar (for glaze)
  • 1/4 cup orange juice (for glaze)

Instructions

  1. Heat milk to 110°F and add yeast. Let bloom for 5 minutes until bubbly.
  2. In a large bowl, combine yeast mixture, egg, sugar, and salt.
  3. Grate cold butter and add to bowl. Add flour and combine until just incorporated.
  4. Knead by hand for 8-10 minutes or use stand mixer with dough hook for 5-6 minutes until smooth ball forms.
  5. Cover and let rise for 1 hour until doubled.
  6. Roll dough into a 1/2 inch thick rectangle (about 12×16 inches).
  7. Spread 4 tablespoons room temperature butter over dough. Mix brown sugar, 2 tablespoons flour, orange zest, cardamom, and salt. Sprinkle over butter.
  8. Roll dough tightly from long side into a log. Pinch seam and roll seam-side down.
  9. Cut log in half lengthwise, stopping 1 inch from one end. Twist the two halves together 2-3 times, keeping cut sides facing up.
  10. Coil twisted dough into a circle. Place in buttered 8-inch or 9-inch skillet.
  11. Cover and let rise for 1 hour.
  12. Preheat oven to 350°F. Bake uncovered for 25 minutes, then cover with foil and bake 10 more minutes.
  13. Whisk confectioner’s sugar and orange juice until smooth.
  14. Remove from oven, cool 10 minutes, pour glaze over warm bread. Serve warm or at room temperature.

Notes

  • Can be prepared through twisting step the night before. Refrigerate overnight, bring to room temperature 30 minutes before baking.
  • Can use a 9-inch pie dish or baking sheet if skillet not available.
  • Milk should be 110°F, not hotter, to avoid killing yeast.
  • Fresh orange zest is essential for best flavor.
  • Cold grated butter creates flaky layers in the dough.
