Rich, creamy pasta with seasoned ground beef and garlic butter sauce. Everything cooks in one pot for minimal cleanup.

  • 1 lb ground beef (80/20 recommended)
  • 8 oz short pasta (penne, rotini, rigatoni, or farfalle)
  • 4 cups beef broth (low-sodium)
  • 1 tbsp olive oil (extra virgin)
  • 3 tbsp butter (unsalted preferred)
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1/2 cup shredded mozzarella (low-moisture)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat olive oil in large deep skillet over medium-high heat. Add ground beef and cook for 6-8 minutes, breaking into crumbles, until browned with no pink remaining. Drain excess grease, leaving about 2 tablespoons.
  2. Add butter to pan with beef. Once melted, add garlic, Italian seasoning, red pepper flakes, smoked paprika, salt, and pepper. Cook 1-2 minutes, stirring constantly, until fragrant.
  3. Pour in beef broth, scraping bottom to release brown bits. Add uncooked pasta and stir to submerge.
  4. Increase heat to high and bring to rolling boil. Reduce heat to medium-low, cover, and simmer 12-15 minutes, stirring every 3-4 minutes, until pasta is al dente.
  5. Turn heat to low. Pour in heavy cream and stir. Add Parmesan and mozzarella, stirring continuously until melted into smooth sauce.
  6. Turn off heat and let sit uncovered 5 minutes to thicken. Sprinkle with parsley before serving.

Notes

  • Use 80/20 ground beef for best flavor. Fresh garlic is essential for amazing aroma.
  • Bronze-cut pasta has rougher texture that sauce clings to better.
  • Keep heat low when adding cheese to prevent graininess. If sauce too thick, add pasta water or broth.
