One-Pan Cowboy Butter Tortellini Steak Bites

Bold and flavorful one-pan meal with seared steak bites, cheese tortellini, and zesty cowboy butter sauce. Quick and impressive!

Ingredients

  • 1 1/2 lbs sirloin or ribeye steak, cut into bite-sized cubes
  • 1 tsp Cajun seasoning, or to taste
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 tsp red pepper flakes, optional
  • 1 tsp Dijon mustard
  • Juice of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 12 oz cheese tortellini, fresh or refrigerated
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup reserved pasta water

Instructions

  1. Boil salted water and cook tortellini according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Pat steak pieces dry with paper towels.
  3. Combine Cajun seasoning, paprika, garlic powder, salt and pepper. Season steak cubes generously.
  4. Heat olive oil in large skillet over medium-high. Sear steak bites 2-3 minutes per side until browned. Don’t crowd pan. Remove to plate.
  5. Reduce heat to medium. Melt butter in same skillet.
  6. Add minced garlic and cook 1 minute, stirring constantly, until fragrant.
  7. Stir in red pepper flakes, Dijon mustard, and lemon juice. Add parsley and chives, mixing well.
  8. Return tortellini and steak to skillet. Toss until coated. Add reserved pasta water gradually until sauce is silky.
  9. Stir in Parmesan until melted and creamy.
  10. Plate while hot. Garnish with extra Parmesan and parsley.

Notes

  • Ribeye provides more marbling for richer flavor; sirloin is leaner.
  • Fresh tortellini has best texture but frozen works too.
  • Fresh herbs essential for authentic cowboy butter flavor.
