4 boneless, skinless chicken breasts (about 6–8 oz each, even thickness preferred)
¼ cup olive oil (extra virgin for best flavor)
2 tablespoons lemon juice (fresh squeezed is ideal)
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste (about ½ teaspoon each)
1 teaspoon dried Italian herbs (or use a blend of basil, oregano, and thyme)
Instructions
Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish with cooking spray or olive oil.
In a medium mixing bowl, whisk together ¼ cup olive oil, 2 tablespoons lemon juice, 1 teaspoon garlic powder, 1 teaspoon onion powder, salt, pepper, and 1 teaspoon dried Italian herbs until well combined.
Place chicken breasts in the prepared baking dish in a single layer. Pour the marinade evenly over the top and flip to coat each breast thoroughly on all sides.
Bake in the preheated oven for 25-30 minutes until an instant-read thermometer inserted into the thickest part reads 165°F, juices run clear, and top is golden brown.
