  • 4 boneless, skinless chicken breasts (about 68 oz each, even thickness preferred)
  • ¼ cup olive oil (extra virgin for best flavor)
  • 2 tablespoons lemon juice (fresh squeezed is ideal)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste (about ½ teaspoon each)
  • 1 teaspoon dried Italian herbs (or use a blend of basil, oregano, and thyme)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish with cooking spray or olive oil.
  2. In a medium mixing bowl, whisk together ¼ cup olive oil, 2 tablespoons lemon juice, 1 teaspoon garlic powder, 1 teaspoon onion powder, salt, pepper, and 1 teaspoon dried Italian herbs until well combined.
  3. Place chicken breasts in the prepared baking dish in a single layer. Pour the marinade evenly over the top and flip to coat each breast thoroughly on all sides.
  4. Bake in the preheated oven for 25-30 minutes until an instant-read thermometer inserted into the thickest part reads 165°F, juices run clear, and top is golden brown.
  5. Remove from oven and let the chicken rest for 5 minutes before slicing to allow juices to redistribute throughout the meat.

Notes

  • Ensure chicken breasts are similar in size for even cooking. Pound thicker breasts to even thickness if needed.
