Juicy baked chicken tenders marinated in lemon, garlic, and Mediterranean herbs. A healthy, high-protein dinner that is simple, fast, and full of bold flavor.
In a large mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, dried basil, dried thyme, paprika, salt, and black pepper until fully combined.
Add chicken tenders to the bowl and toss to coat evenly. Cover and refrigerate for at least 15 minutes, or up to 4 hours. Do not exceed 4 hours as the lemon juice will break down the meat texture.
Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or lightly grease with cooking spray.
Place marinated Mediterranean chicken tenders in a single layer on the baking sheet with space between each piece to allow even roasting, not steaming.
Bake for 15 to 20 minutes or until internal temperature reaches 165 degrees F (74 degrees C) and the chicken is no longer pink in the center. Thicker tenders need the full 20 minutes.
If using feta cheese, sprinkle over chicken during the last 2 to 3 minutes of baking.
Remove from oven and let rest for 3 to 5 minutes. Garnish with fresh parsley and serve warm.
Notes
Do not marinate longer than 4 hours. The lemon juice begins to break down the chicken protein and can affect the final texture.
To grill instead of bake, cook over medium-high heat for 6 to 8 minutes per side until the internal temperature reaches 165 degrees F.
Omit feta to make this recipe fully dairy-free.
For extra flavor, add 1 tablespoon of fresh dill or mint to the marinade.
