- 1 large egg
- 1 tablespoon milk (any kind)
- 1/2 teaspoon maple extract
- 1/2 teaspoon ground cinnamon
- 1 tablespoon butter for cooking
- In a shallow dish, whisk together egg, milk, maple extract, and cinnamon until completely combined with no streaks.
- Slice bagel in half horizontally. Dip each half into the egg mixture, coating both sides and letting it soak for 5-10 seconds per side.
- Heat a nonstick skillet over medium heat and add butter, swirling to coat the pan as it melts.
- Place bagel halves cut side down onto the skillet. Cook for 2-3 minutes until deep golden brown with slightly crispy edges.
- Flip bagel halves carefully and cook the rounded side for another 2-3 minutes until golden and egg is firm to the touch with no wet spots.
- Transfer to a plate and serve hot with maple syrup and powdered sugar if desired.
Notes
- Day-old bagels work better than fresh ones as they absorb the egg mixture without getting soggy. Toast fresh bagels lightly first.
- Use real maple extract for authentic flavor. In a pinch, substitute with vanilla extract or a small amount of real maple syrup.
- Can be frozen after cooking. Reheat in toaster or oven from frozen for quick breakfasts.
