Crispy on the outside, creamy and cheesy on the inside, these Loaded Mashed Potato Bites are the perfect quick snack or appetizer. Made with mashed potatoes, cheddar, bacon, and green onions.

  • 1½ cups mashed potatoes (cold and firm)
  • ¾ cup shredded cheddar cheese
  • ½ cup cooked bacon, chopped
  • ¼ cup chopped green onions
  • 2 tablespoons sour cream
  • 1 large egg
  • 1 cup breadcrumbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Make sure the mashed potatoes are cool and firm before starting. If freshly made, refrigerate for 20-30 minutes.
  2. In a large bowl, mix mashed potatoes, cheddar cheese, bacon, green onions, sour cream, and egg until fully combined. Mixture should be thick and hold together.
  3. Scoop about 1 tablespoon of mixture and roll into balls. Wet hands slightly if mixture sticks. You should get 20-24 bites.
  4. Roll each ball in breadcrumbs, pressing gently to coat evenly on all sides. Place on a plate or tray.
  5. Preheat oven to 400°F and line a baking sheet with parchment paper or lightly grease it.
  6. Place bites on prepared baking sheet spacing them 1 inch apart. Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy.
  7. For frying: Heat 2-3 inches of oil to 350°F using a thermometer. Fry in small batches for 2-3 minutes until crispy. Drain on paper towels.
  8. For air frying: Preheat air fryer to 375°F. Arrange bites in single layer and cook for 12-15 minutes, shaking basket halfway through.
  9. Let cool for 3-5 minutes before serving with your favorite dip.

Notes

  • Make sure mashed potatoes are not too soft or the bites won’t hold their shape. Cold potatoes work best.
  • Use finely shredded cheese so it blends better with the mixture.
  • For extra crispiness, use panko breadcrumbs instead of regular breadcrumbs.
  • Can substitute turkey bacon for regular bacon.
  • If frying, maintain oil temperature at 350°F for best results.
