Instructions
Heat large skillet over medium heat. Add ground beef and cook 5-7 minutes, breaking apart with wooden spoon, until completely browned with no pink remaining. Drain excess fat if needed.
Add minced garlic and fresh ginger to browned beef. Stir constantly for 1 minute until fragrant, being careful not to burn the garlic.
Stir in brown sugar, soy sauce, sesame oil, and red pepper flakes if using. Mix well to coat all beef evenly.
Let mixture simmer for 2-3 minutes, stirring occasionally, until sauce thickens slightly and becomes glossy.
Serve hot over cooked rice and top with green onions, sesame seeds, shredded carrots, or cucumber slices as desired.
Notes
Use lean ground beef to prevent excess grease. Ground turkey or chicken also work well.
Fresh garlic and ginger provide the best flavor, but ground ginger works in a pinch.
Reduce brown sugar to 2 tablespoons for less sweet version.
Top with fried egg for extra richness.
Stores well for up to 4 days. Flavors improve after a day in the fridge.
