  • 4 boneless, skinless chicken breasts (about 1.52 pounds total)
  • 4 cloves fresh garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 tablespoon dried Italian herbs (oregano, basil, thyme blend)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and spray a 9×13 inch baking dish with nonstick cooking spray.
  2. Pat chicken breasts dry and season both sides generously with salt and pepper. Place in prepared baking dish, spacing evenly.
  3. In medium bowl, whisk together heavy cream, chicken broth, minced garlic, chopped sun-dried tomatoes, and Italian herbs until well combined.
  4. Pour cream mixture evenly over chicken breasts, making sure each piece is coated and sun-dried tomatoes are distributed around dish.
  5. Bake for 25-30 minutes until chicken reaches internal temperature of 165°F and sauce is bubbling around edges.
  6. Remove from oven and let rest 5 minutes before serving.
  7. Spoon sauce over each piece of chicken, garnish with fresh parsley if desired, and serve immediately.

  • Pound thick chicken breasts to even 1-inch thickness for uniform cooking.
  • Chicken thighs work well but need extra 5 minutes baking time.
  • Reduce chicken broth to 3/4 cup if you prefer thicker sauce.
