Season the chicken breasts on both sides with salt, pepper, garlic powder, and smoked paprika. Let sit for 10-15 minutes at room temperature.
Heat olive oil in a large skillet over medium-high heat until shimmering.
Sear chicken for 4-5 minutes per side until golden and cooked through to 165°F. Remove and set aside.
Lower heat to medium-low. Add butter and hot honey to the skillet, stirring and scraping browned bits. Simmer for 2-3 minutes until slightly thickened.
Return chicken to skillet, spooning glaze over each piece. Cook another 2-3 minutes to absorb flavors.
Transfer to serving plate. Drizzle with extra glaze and sprinkle with crumbled feta and fresh herbs. Serve hot.
