  • 4 boneless skinless chicken breasts
  • 3 tablespoons hot honey
  • 1/2 cup crumbled feta cheese
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken breasts dry with a paper towel and rub with olive oil, garlic powder, smoked paprika, salt, and black pepper on both sides.
  3. Preheat an oven-safe skillet over medium-high heat with a bit of olive oil until shimmering.
  4. Sear chicken breasts for 3-4 minutes per side until golden brown without moving them to develop a crust.
  5. Lower heat to medium and drizzle hot honey over the chicken, allowing it to bubble and begin caramelizing.
  6. Baste with a spoon and let the honey bubble for 1-2 minutes, tilting the pan to pool honey for easier basting.
  7. Transfer the skillet to the preheated oven and bake for 10-12 minutes.
  8. Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (74°C) in the thickest part.
  9. Remove from oven and immediately top with crumbled feta and fresh thyme leaves.
  10. Let rest 5 minutes before serving to allow juices to redistribute and keep chicken moist.

Notes

  • Use oven-safe skillet like cast iron for easy stovetop to oven transition. Pat chicken dry for best searing.
  • Chicken thighs work beautifully – adjust oven time to 15-17 minutes. Make your own hot honey by warming honey with red pepper flakes.
  • Don’t skip resting time – this keeps chicken juicy. Not ideal for freezing, best enjoyed fresh.
