Sweet and spicy quesadillas loaded with shredded chicken, melted cheese, and hot honey BBQ sauce, toasted to golden perfection. Quick fusion recipe ready in 20 minutes.

  • 2 cups cooked shredded chicken
  • 1/2 cup BBQ sauce
  • 2 tablespoons hot honey
  • 4 (10-inch) flour tortillas
  • 2 cups shredded Monterey Jack or cheddar cheese
  • 1 tablespoon butter, melted
  • Sour cream for serving (optional)
  • Guacamole for serving (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Combine shredded chicken, BBQ sauce, and hot honey in medium bowl. Mix thoroughly until chicken is evenly coated.
  2. Lay out four tortillas on clean surface. Sprinkle 1/2 cup cheese over one half of each tortilla in even layer.
  3. Divide chicken mixture evenly among tortillas, spreading over cheese layer. Each should have about 1/2 cup chicken. Top with remaining cheese.
  4. Fold empty half of each tortilla over filled side, creating half-moon shape. Press down gently to help filling stay in place.
  5. Heat large skillet or griddle over medium heat. Brush top of each folded quesadilla with melted butter.
  6. Place quesadillas butter-side down in hot skillet. Brush top side with remaining butter while bottom cooks. Work in batches if needed.
  7. Cook 2-3 minutes per side until golden brown and crispy. Cheese should be fully melted. Watch carefully to prevent burning.
  8. Remove from skillet and let rest 1 minute before cutting. Slice into 3-4 wedges and serve warm with optional toppings.

Notes

  • Use rotisserie chicken or leftover cooked chicken for fastest prep. Monterey Jack melts beautifully but sharp cheddar adds extra flavor.
  • Don’t overfill with sauce or cheese to prevent sogginess. Cook on medium heat to crisp tortilla before cheese releases moisture.
  • Can assemble up to 4 hours ahead and refrigerate. Cook just before serving for crispiest results.
