Simple yet elegant roasted carrots tossed in sweet and savory honey garlic butter glaze. Perfect side dish for any occasion, ready in just 30 minutes.

Ingredients

  • 1 pound carrots, peeled and cut into sticks or left whole if small
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 2 tablespoons honey
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and position rack in center.
  2. In large mixing bowl, toss carrots with olive oil, salt, and pepper until evenly coated.
  3. Spread carrots in single layer on large baking sheet without overlapping.
  4. Roast for 20-25 minutes, flipping halfway through, until tender and lightly caramelized with golden-brown edges.
  5. While carrots roast, melt butter in small saucepan over medium heat.
  6. Add minced garlic to melted butter and cook for 1 minute, stirring constantly, until fragrant and lightly golden.
  7. Remove saucepan from heat and stir in honey until mixture becomes glossy and well combined.
  8. Once carrots are done roasting, drizzle warm honey garlic butter over them and toss gently to coat evenly.
  9. Transfer to serving dish and garnish with fresh chopped parsley before serving.

Notes

  • Cut carrots into similar-sized pieces for even cooking.
  • Very thick carrots may need extra 5 minutes roasting time.
  • Add pinch of red pepper flakes to butter for extra flavor layer.
  • Fresh thyme or rosemary can substitute for parsley as garnish.
