This high-protein creamy taco soup is a comforting, flavorful, and easy-to-make dish packed with protein from lean ground turkey. Perfect for cozy dinners or meal prep.

  • 1 lb (450g) lean ground turkey or chicken
  • 1 tablespoon olive oil
  • 1 packet taco seasoning (or homemade taco seasoning)
  • 1 (14.5 oz) can diced tomatoes
  • 1 (10 oz) can green chilies (optional)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • 8 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the ground turkey or chicken and cook for 6-8 minutes until browned and no pink remains.
  2. Add taco seasoning, garlic powder, onion powder, cumin, salt, and pepper. Stir constantly for 1 minute until fragrant.
  3. Pour in diced tomatoes, green chilies, black beans, and chicken broth. Stir to combine and bring to a gentle simmer.
  4. Add cubed cream cheese and stir continuously for 4-5 minutes until completely melted and smooth.
  5. Gradually add shredded cheddar cheese, stirring constantly until melted and soup reaches silky consistency.
  6. Taste and adjust seasoning as needed. Serve hot with desired toppings.

Notes

  • Cube cream cheese beforehand for easier melting and smoother texture.
  • Can substitute ground beef for turkey/chicken or make vegetarian with extra beans.
  • Add jalapeños or hot sauce for extra heat. Soup tastes even better the next day.
