- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup honey or maple syrup
- 1 cup mashed banana (about 1 large banana)
- ½ cup coconut oil or butter, melted
- 2 eggs, at room temperature
- 1 teaspoon vanilla extract
- 2 teaspoons lemon zest
- ⅓ cup old fashioned oats
- 1 cup fresh blueberries
- Preheat oven to 375°F (190°C). Line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, whisk together oat flour, baking powder, and salt.
- In a blender, combine honey, banana, coconut oil, eggs, vanilla, and lemon zest. Blend until smooth and frothy.
- Pour the wet mixture into the dry ingredients and whisk until just combined.
- Stir in oats and gently fold in blueberries.
- Pour batter into prepared pan and bake for 45-55 minutes.
- If browning too quickly, cover with foil around 35 minutes.
- Cool in pan for 10 minutes, then lift out and slice.
Notes
- Make 12 muffins by baking at 350°F for 25 minutes.
- Store covered at room temp for 3 days or freeze up to 3 months.
- Use room temp eggs and avoid overmixing for tender texture.
