Wholesome blueberry oat breakfast bread made with natural ingredients for a nutritious and satisfying start to the day.

Ingredients

  • 2 cups oat flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup honey or maple syrup
  • 1 cup mashed banana (about 1 large banana)
  • ½ cup coconut oil or butter, melted
  • 2 eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon zest
  • ⅓ cup old fashioned oats
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 375°F (190°C). Line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together oat flour, baking powder, and salt.
  3. In a blender, combine honey, banana, coconut oil, eggs, vanilla, and lemon zest. Blend until smooth and frothy.
  4. Pour the wet mixture into the dry ingredients and whisk until just combined.
  5. Stir in oats and gently fold in blueberries.
  6. Pour batter into prepared pan and bake for 45-55 minutes.
  7. If browning too quickly, cover with foil around 35 minutes.
  8. Cool in pan for 10 minutes, then lift out and slice.

Notes

  • Make 12 muffins by baking at 350°F for 25 minutes.
  • Store covered at room temp for 3 days or freeze up to 3 months.
  • Use room temp eggs and avoid overmixing for tender texture.
