A delicious and easy-to-make recipe for Ham and Cheese Sticks that is perfect for snacking or as a party appetizer. These golden, flaky puff pastry sticks are filled with a savory mixture of shredded chicken, diced ham, and melted cheese.

  • 1 cup shredded chicken (rotisserie works great)
  • 1 cup diced ham
  • 1 cup shredded cheese (cheddar, mozzarella, or Swiss)
  • 1 package puff pastry
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface until about 1/8 inch thick.
  3. Cut the puff pastry into rectangles, approximately 3 by 4 inches each.
  4. In a bowl, mix the shredded chicken, diced ham, and shredded cheese together until well combined. Make sure chicken is fully cooked and cooled to room temperature.
  5. Place about 2 tablespoons of the chicken, ham, and cheese mixture on one half of each pastry rectangle, leaving a 1/2-inch border on three sides.
  6. Fold the pastry over the filling and seal the edges by pressing firmly with a fork.
  7. Brush the top of each stick with beaten egg wash for a golden finish.
  8. Place the sticks on the prepared baking sheet, leaving 1 inch between each.
  9. Bake in the oven for 15 to 20 minutes or until golden brown and puffed.
  10. Remove from oven and let cool for 3 to 5 minutes before serving.

Notes

  • Seal edges well to prevent filling from leaking during baking. Press firmly with a fork for best results.
  • Don’t overfill pastry rectangles. Use about 2 tablespoons of filling per stick.
  • Make sure chicken is fully cooked and cooled before using in the filling.
  • For extra flavor, add garlic powder, paprika, or Italian seasoning to the filling mixture.
  • Can freeze unbaked sticks for up to 2 months. Bake from frozen, adding 3 to 5 extra minutes.
