  • 1 lb lean ground beef (93% preferred)
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
  • 1 large avocado, sliced just before serving
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tablespoons olive oil, divided
  • 1 taco seasoning packet (or 2 tablespoons homemade)
  • 2 tablespoons hot honey
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cinnamon
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Toss diced sweet potatoes with 1 tablespoon olive oil, paprika, garlic powder, cinnamon, salt, and pepper until evenly coated.
  3. Spread sweet potatoes in single layer on prepared baking sheet and roast for 40-45 minutes, stirring once halfway through, until fork-tender with caramelized edges.
  4. While potatoes roast, heat remaining tablespoon olive oil in large skillet over medium-high heat. Add diced onion and cook for 5-6 minutes until softened and translucent.
  5. Add ground beef to skillet, breaking into bite-sized pieces with wooden spoon. Cook 6-8 minutes until no pink remains and internal temperature reaches 160°F. Drain excess fat if needed.
  6. Stir in taco seasoning and cook 2 minutes more until fragrant and well-coated.
  7. Layer warm roasted sweet potatoes, seasoned ground beef, sliced avocado, and cottage cheese in bowls. Drizzle with hot honey to taste and serve immediately.

Notes

  • Use 93% lean ground beef for maximum protein without excess grease. If using 85% lean, drain well after browning.
  • Blend cottage cheese for 30 seconds for creamier, sauce-like consistency.
  • Store components separately for up to 4 days. Reheat only beef and sweet potatoes, add fresh cottage cheese and avocado when serving.
  • Adjust hot honey amount to control heat level based on personal preference.
