- 1 cup warm water
- 1 pkg active dry yeast
- 1 tbsp sugar
- 3 cups all purpose flour
- 1 tsp salt
- 1/4 cup diced green chile
- 1.5 cups shredded cheddar cheese
- Combine warm water, yeast, and sugar in mixer bowl. Let sit 10 minutes until foamy.
- Add flour, green chile, and salt. Mix with dough hook until a dough forms. Knead 5 minutes.
- Cover bowl with towel and let dough rise for 1 hour.
- Divide dough into 8 balls. Place on greased sheet. Rest 15 minutes. Boil water.
- Form bagel holes. Rest another 15 minutes. Preheat oven to 415°F.
- Boil bagels 2 minutes per side. Drain and return to sheet.
- Top with extra chile and cheese. Bake 25 minutes until cheese browns.

- Use frozen or fresh green chiles for best flavor.
