French Dip Tortilla Roll Ups deliver all the savory comfort of a classic French dip in an easy hand-held form. Quick to assemble and oven-ready in minutes.

  • 4 large flour tortillas (burrito-size, about 12 inches diameter)
  • 8 slices provolone cheese (thinly sliced)
  • 12 ounces deli roast beef (freshly sliced)
  • 1 cup French fried onions (store-bought or homemade)
  • 2 tablespoons extra virgin olive oil
  • 1 can (10.5 ounces) beef consommé
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons low sodium soy sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper.
  2. Warm tortillas in microwave for 15-20 seconds, stacking them and covering with a damp paper towel to prevent drying. Lay one tortilla flat on work surface.
  3. Place 2 slices provolone cheese over the lower half of tortilla, followed by 3 ounces roast beef and 1/4 cup French fried onions. Brush inside edge lightly with olive oil.
  4. Starting from filled end, roll tortilla tightly like a burrito, pressing oiled edge to seal. Place seam-side down on baking sheet. Repeat with remaining tortillas.
  5. Brush tops and sides of each roll lightly with remaining olive oil to promote golden, crispy finish.
  6. Bake for 8 to 10 minutes, rotating baking sheet halfway through. Check at 8 minutes – tortillas should be golden brown and crispy with cheese beginning to bubble at edges.
  7. While roll ups bake, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in small saucepan. Whisk and bring to gentle simmer over medium heat for 3 to 4 minutes until hot and fragrant.
  8. Let baked roll ups rest 2 minutes on wire rack. Slice each roll into halves or thirds using sharp knife.
  9. Arrange slices on platter and serve immediately with warm au jus for dipping.

Notes

  • Use beef consommé instead of broth for richest, most flavorful au jus dipping sauce.
  • Warm tortillas with damp paper towel before rolling to prevent cracking and ensure easy assembly.
  • Can assemble up to 4 hours ahead, cover with plastic wrap, and refrigerate, then bake just before serving.
