Classic American comfort food with tender beef, creamy mashed potatoes, toasted bread, and rich gravy. Perfect for busy weeknights with hands-off slow cooker preparation.

  • 2 pounds beef roast (chuck or round)
  • 1 medium onion, sliced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 6 slices bread (white or Texas toast)
  • 4 cups mashed potatoes (homemade or prepared)

Instructions

  1. Place sliced onion at the bottom of slow cooker, spreading evenly across the surface.
  2. Lay beef roast on top of onions, pressing down gently to ensure contact with onions.
  3. Pour beef broth, Worcestershire sauce, and soy sauce over beef, ensuring liquid covers at least half of the meat.
  4. Sprinkle garlic powder, onion powder, dried thyme, black pepper, and salt evenly across the top of beef.
  5. Cover and cook on LOW for 8 hours or HIGH for 4 to 5 hours until beef is fork-tender.
  6. Remove beef from slow cooker using tongs, place on cutting board, let rest 5 minutes, then shred into bite-sized pieces using two forks.
  7. Strain onions from cooking liquid using fine-mesh sieve, returning only the broth to slow cooker.
  8. Mix cornstarch with cold water until smooth, stir into broth, and cook on HIGH uncovered for 10 to 15 minutes until gravy thickens.
  9. Toast bread slices until golden. Layer toasted bread on each plate, top with mashed potatoes and shredded beef, then ladle gravy over everything.

Notes

  • Choose well-marbled chuck roast for best tenderness and flavor. Round roast works but is leaner.
  • Don’t open slow cooker lid during cooking as it releases heat and extends cooking time.
  • Gravy thickens as it cools, so adjust consistency with beef broth if needed when reheating.
  • Store beef, gravy, and potatoes separately for best texture. Do not store bread with leftovers; toast fresh when serving.
