In a large mixing bowl, combine graham cracker crumbs, unsweetened cocoa powder, and powdered sugar. Mix until well combined with no lumps.
Add creamy peanut butter, softened cream cheese, and vanilla extract to the dry mixture. Using a spatula or electric mixer, blend until smooth and creamy.
Gently fold in mini chocolate chips for added texture and flavor.
Using your hands, scoop out small portions of the mixture and shape into small balls or logs. Place them on a baking sheet lined with parchment paper.
Cover the baking sheet with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld and treats to firm up.
Serve chilled, topped with whipped cream if desired.
Notes
Ensure cream cheese is properly softened for smooth mixing. Don’t skip the chilling time – treats need to firm up properly.
Can substitute sunflower seed butter for nut-free version, or use dairy-free cream cheese for dairy-free option.
