Ground Beef Enchiladas are a delicious blend of savory beef, zesty sauce, and gooey cheese wrapped in soft tortillas. Perfect for family dinners!

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, brown the ground beef with diced onions until translucent (5-7 minutes). Drain excess grease.
  3. Add minced garlic, cumin, and chili powder; sauté for another minute.
  4. Spoon 2-3 tablespoons of beef mixture onto each tortilla, roll tightly, and place seam-side down in greased baking dish.
  5. Pour enchilada sauce over the tortillas and sprinkle with cheese.
  6. Bake uncovered for 20-25 minutes until bubbly and golden.
  7. Let rest 3-5 minutes, top with sour cream and enjoy!
