Instructions
Heat a skillet over medium-high heat and cook ground beef for 8-10 minutes until browned with no pink remaining. Drain excess fat.
Add chopped onion and minced garlic to the skillet. Saute for 5 minutes until translucent and fragrant.
Transfer beef mixture to 6-quart crockpot. Layer diced potatoes, sliced carrots, and celery over the beef.
Pour broth over vegetables, then add thyme, parsley, paprika, salt, and pepper. Stir to combine.
