  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese, softened to room temperature for 30 minutes
  • 12 oz tortellini (fresh or frozen)
  • 2 cups fresh spinach
  • 2 teaspoons Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts generously with salt and pepper. Place them in the CrockPot in a single layer.
  2. Add minced garlic over the chicken and pour in chicken broth. Cook on low for 4 hours until chicken is cooked through and tender.
  3. Stir in softened cream cheese for 1-2 minutes until fully incorporated and smooth.
  4. Using two forks, shred the chicken directly in the pot. Add tortellini and Italian seasoning, stirring gently. Cook for an additional hour on low.
  5. Fold in fresh spinach with lid off and let wilt for 2-3 minutes. Garnish with grated Parmesan cheese and serve warm.

Notes

  • Soften cream cheese at room temperature for 30 minutes before adding for easiest mixing and smoothest sauce.
  • Both fresh and frozen tortellini work perfectly. No need to thaw frozen tortellini before adding to the CrockPot.
  • Leftovers store well for 3-4 days. Reheat gently with a splash of broth to restore creamy consistency.
