  • 6 tablespoons butter
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup corn syrup
  • 1/2 cup condensed milk
  • 1 1/2 teaspoons vanilla extract
  • 2 cups chopped chocolate

Instructions

  1. Preheat oven to 350°F (175°C). Toast pecans on parchment-lined baking pan for 8-10 minutes until fragrant. Chop and set aside.
  2. Melt butter in microwave-safe bowl, being careful to prevent splattering.
  3. In larger bowl, mix melted butter with brown sugar, granulated sugar, corn syrup, and condensed milk until fully incorporated.
  4. Microwave mixture for 6 minutes, stirring halfway through until rich amber color and bubbling steadily.
  5. Stir in vanilla extract, then gradually fold in chopped pecans until completely coated.
  6. Cool slightly, then refrigerate for 30 minutes to firm up.
  7. Melt chocolate in separate microwave-safe bowl, stirring every 30 seconds until smooth.
  8. Use fork to scoop caramel-pecan portions and dip into melted chocolate. Place on wax paper.
  9. Refrigerate chocolate-covered turtles for 30 minutes until completely set.

Notes

  • Toast pecans first for best nutty flavor. Use real chocolate instead of chocolate chips for smoothest melting.
  • Cook caramel to exactly 240°F (soft-ball stage) for perfect texture. Test by dropping small amount in cold water.
  • Store in airtight container up to 1 week at room temperature or freeze up to 3 months.
