This Chicken Caesar Pasta Salad combines all the classic flavors of a Caesar salad with hearty pasta for a satisfying meal. Tender chicken, crisp romaine, and pasta are tossed in a creamy homemade Caesar dressing and topped with parmesan and crunchy croutons.

Ingredients

  • 8 oz penne or rotini pasta
  • 2 cups cooked chicken breast, cubed
  • 4 cups romaine lettuce, chopped
  • 1/2 cup parmesan cheese, freshly grated
  • 1 cup croutons
  • 1/2 cup mayonnaise
  • 2 tablespoons lemon juice, freshly squeezed
  • 2 tablespoons olive oil
  • 1 teaspoon Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon anchovy paste (optional)
  • 1/4 teaspoon black pepper
  • Salt to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente according to package directions. Drain, rinse with cold water, and cool completely before mixing.
  2. Whisk together mayonnaise, lemon juice, olive oil, Worcestershire sauce, minced garlic, Dijon mustard, anchovy paste if using, black pepper, and salt until smooth and creamy. Taste and adjust seasoning.
  3. In a large mixing bowl, combine the completely cooled pasta and cubed cooked chicken.
  4. Pour Caesar dressing over the pasta and chicken. Toss thoroughly until everything is evenly coated.
  5. Add freshly grated parmesan and toss gently to combine.
  6. Add chopped romaine lettuce and give the bowl one final gentle toss just before serving.
  7. Top with croutons right before serving. Serve immediately or refrigerate for 30 minutes for deeper flavor.

Notes

  • Add romaine lettuce and croutons just before serving to prevent wilting and sogginess. Store them separately when meal prepping.
  • Grilled chicken adds the best smoky depth of flavor. If leftovers taste dry, stir in a drizzle of olive oil or extra dressing before serving.
