Tender chicken swimming in a creamy sun-dried tomato Parmesan sauce. Fancy enough for date night but easy enough for weeknights. Ready in 35 minutes.

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 to 2 pounds total)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 to 4 cloves garlic, minced
  • ½ cup chicken broth
  • ¾ cup heavy cream
  • ½ cup sun-dried tomatoes packed in oil, drained and chopped
  • ⅓ cup freshly grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Pinch of red pepper flakes (optional)
  • ¼ cup fresh basil, chopped (or fresh parsley)

Instructions

  1. Pat chicken breasts dry with paper towels and season both sides generously with salt and pepper.
  2. Heat olive oil in large skillet over medium-high heat until shimmering. Add chicken and sear for 5 to 6 minutes per side until golden brown. Remove to plate and set aside.
  3. Add minced garlic to same pan over medium-high heat. Stir constantly for about 30 seconds until fragrant.
  4. Pour in chicken broth and scrape up browned bits from bottom of pan with wooden spoon.
  5. Stir in heavy cream, Parmesan cheese, thyme, sun-dried tomatoes, and red pepper flakes if using. Whisk together and simmer for 3 to 5 minutes until cheese melts and sauce thickens enough to coat back of spoon.
  6. Return chicken and any accumulated juices to pan. Spoon sauce over chicken. Reduce heat to medium-low and simmer gently for 8 to 10 minutes until chicken reaches internal temperature of 165°F.
  7. Remove from heat and scatter fresh basil or parsley on top. Taste and adjust salt and pepper if needed. Serve hot with extra sauce spooned over each portion.

Notes

  • Pat chicken completely dry before seasoning for best searing and golden-brown color.
  • Don’t let sauce boil hard during final simmer or it may separate. Keep at gentle simmer.
  • Chicken thighs work beautifully as substitute – they stay juicier and are more forgiving.
  • Fresh garlic recommended over pre-minced for best flavor in this sauce.
