Hearty one-pot meal with smoky sausage, tender potatoes, and vegetables in rich tomato broth. Budget-friendly and easy to make in the slow cooker.

Ingredients

  • 1 lb smoked sausage, sliced into 1/2-inch rounds
  • 4 medium potatoes, diced into 1-inch cubes (or 1.5 lbs baby potatoes, halved)
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes with juice
  • 2 cups chicken broth
  • 1 teaspoon paprika
  • Salt and black pepper to taste

Instructions

  1. Slice smoked sausage into 1/2-inch rounds.
  2. Dice potatoes into 1-inch cubes for even cooking. If using baby potatoes, cut in half.
  3. Chop onion and bell pepper into bite-sized pieces.
  4. Add sliced sausage, diced potatoes, chopped onion, and bell pepper to crockpot. Spread evenly.
  5. Pour can of diced tomatoes with juice over ingredients.
  6. Add chicken broth and sprinkle paprika evenly over everything.
  7. Stir gently to distribute seasonings. Add salt and black pepper to taste.
  8. Cover and cook on low for 5 to 6 hours until potatoes are fork-tender. Do not lift lid during cooking.
  9. Pierce potatoes with fork to test tenderness. Cook additional 30 minutes if needed.
  10. Taste and adjust seasoning. Serve hot directly from crockpot.

Notes

  • Use any potato variety you have on hand. Dice evenly for uniform cooking.
  • Smoked sausage provides the best flavor. Kielbasa, andouille, or Italian sausage also work well.
  • Don’t lift crockpot lid during cooking to maintain temperature and ensure even cooking.
  • Can add carrots, celery, or other vegetables based on preference.
