Buttery golden buns stuffed with fall-apart tender beef and gooey provolone cheese, served with flavorful au jus sauce. Easy slow cooker recipe with just 10 minutes prep.

  • 3 lb boneless chuck roast
  • 1 package (1 oz) onion soup mix
  • 3 cloves garlic, minced or pressed
  • 1 teaspoon dried thyme
  • 3 tablespoons Worcestershire sauce
  • 1 can (10.5 oz) condensed French onion soup
  • 3 tablespoons butter, cut into pats
  • 68 hoagie rolls or French rolls
  • Provolone cheese slices
  • 2 tablespoons butter, melted (for brushing rolls)
  • Salt and pepper to taste

Instructions

  1. Place the chuck roast in the slow cooker and season evenly with onion soup mix, minced garlic, and dried thyme.
  2. Add Worcestershire sauce and pour condensed French onion soup over the roast. Distribute butter pats evenly across the top.
  3. Cover the Crock Pot with lid and cook on low for 8-10 hours or high for 4-6 hours until roast is fall-apart tender.
  4. Remove roast and shred with two forks. Strain cooking liquid through fine-mesh strainer into bowls, skimming excess fat for au jus sauce.
  5. Brush inside of hoagie rolls with melted butter. Broil cut-side up for 1-2 minutes until golden brown.
  6. Layer provolone cheese slices on bottom half of each bun. Pile shredded beef on top. Optionally broil 30-60 seconds to melt cheese.
  7. Serve sandwiches immediately with warm au jus on the side for dipping.

Notes

  • Chuck roast works best for tender, flavorful results. Can substitute with beef brisket or rump roast.
  • Can use beef consommé instead of French onion soup for similar results.
  • Spicy variation: Add 1/2 teaspoon crushed red peppers to cooking liquid and top with pickled jalapeños.
  • Can prep ingredients in Crockpot and refrigerate up to 2 days ahead before cooking.
