Tender chicken breasts in a rich and creamy sundried tomato sauce made in your slow cooker. A meal so good it’s proposal worthy! This easy crock pot chicken recipe is absolutely delicious served with pasta, rice or mashed potatoes.

Ingredients

  • 4 chicken breasts, skin on or skinless
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon unsalted butter
  • 1 teaspoon olive oil (can omit if preferred)
  • ½ cup (120ml) white wine + ½ cup water OR 1 cup (240ml) chicken broth
  • 4 tablespoons diced sun-dried tomatoes, drained
  • 1 teaspoon sweet paprika
  • 1 teaspoon garlic granules
  • 1 teaspoon chicken bouillon (if using wine)
  • 1 cup (225g) sour cream or heavy cream
  • 1 tablespoon cornstarch diluted in 2 tablespoons cold water (optional)
  • 23 tablespoons grated Parmesan cheese
  • 2 tablespoons flat leaf parsley or fresh basil, chopped

Instructions

  1. Season the chicken breasts generously with salt, pepper, and sprinkle with dried Italian herbs.
  2. Heat the butter and oil in a pan or directly in the slow cooker if it has a browning function. Pan fry the chicken, skin side down, until golden, about 3-4 minutes.
  3. Turn the chicken breasts over and transfer to the slow cooker if not already using. Pour in the wine or chicken broth. Season with paprika, garlic granules and add the sun-dried tomatoes. Add chicken bouillon if using wine.
  4. Cover and cook on the LOW setting for 90 minutes to 2 hours or until the chicken registers internal temperature of 165°F (75°C). Do not cook on high setting.
  5. Optional: Make a cornstarch slurry by mixing it with cold water and stir into the sauce ten minutes before cooking time is over. The cornstarch will need to be heated through to activate and thicken the sauce. Skip this step if using sour cream.
  6. Pile the chicken to one side and stir in the sour cream or heavy cream until incorporated. Stir in the grated Parmesan cheese until melted and smooth.
  7. Sprinkle with fresh parsley or basil. Serve the chicken over rice, noodles, mashed potatoes or your preferred side.

Notes

  • Do not cook this recipe on the high setting as it can make the chicken breasts tough.
  • Use full-fat sour cream or heavy cream. Low-fat dairy products are likely to curdle.
  • If you use white wine instead of chicken broth, add a teaspoon of chicken bouillon powder or half a crumbled stock cube with the seasoning.
  • This recipe is low-carb apart from the sun-dried tomatoes. Replace them with fresh tomatoes and serve over cauliflower mash for a fully low-carb meal.
  • Chicken thighs can be substituted for breasts and may need slightly less cooking time.
  • Equipment needed: Slow cooker or Crock Pot (preferably with browning function), pan for searing if needed, meat thermometer.
