Crock Pot Honey Garlic Chicken

Tender chicken in sweet and savory honey garlic sauce made effortlessly in the slow cooker. Minimal prep with maximum flavor, ready in 4-6 hours on low.

  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (optional)
  • Sesame seeds for garnish (optional)
  • Sliced green onions for garnish (optional)

Instructions

  1. Place chicken thighs or breasts in bottom of slow cooker in single layer if possible. Distribute evenly for consistent cooking.
  2. Whisk together honey, soy sauce, minced garlic, rice vinegar, and sesame oil in medium bowl until well combined and smooth.
  3. Pour honey garlic sauce over chicken, ensuring all pieces are coated. Use spoon to drizzle over any exposed areas.
  4. Cover and cook on low for 4-6 hours or high for 2-3 hours. Chicken thighs need closer to 6 hours on low while breasts cook faster at 4 hours.
  5. Check chicken with meat thermometer. Fully cooked when internal temperature reaches 165°F (75°C). Meat should be tender and easy to shred.
  6. For thicker sauce, mix cornstarch with cold water to create slurry. Stir into crock pot during final 30 minutes of cooking. Sauce will thicken as it continues cooking.
  7. Remove chicken from slow cooker. Serve whole, slice into strips, or shred completely using two forks. Chicken should pull apart easily.
  8. Arrange chicken on serving plates and spoon honey garlic sauce generously over top. Garnish with sesame seeds and green onions if desired.

Notes

  • Use fresh garlic and quality honey for best flavor. Tamari works as gluten-free soy sauce substitute.
  • Chicken thighs stay moister during long cooking but breasts work well too. Can use frozen chicken but increase cooking time by 1-2 hours.
  • Add red pepper flakes or sriracha for spicy kick. Serve over rice, noodles, or with steamed vegetables.
