  • 6 russet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • 1/2 cup shredded cheddar cheese (optional)
  • Fresh parsley, chopped (for garnish)
  • Cooked and crumbled bacon (optional, for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 5 minutes until translucent, stirring frequently.
  2. Add minced garlic and cook for 1-2 minutes until fragrant, stirring constantly to prevent browning.
  3. Add diced potatoes to the pot, stirring to coat in the onion and garlic mixture.
  4. Pour in broth and add bay leaves, thyme, rosemary, salt, and black pepper. Stir to combine.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until potatoes are fork-tender.
  6. Remove bay leaves and use an immersion blender to achieve desired consistency.
  7. Stir in heavy cream and butter until butter melts completely.
  8. Add cheddar cheese if using, stir until melted. Taste and adjust seasoning. Serve hot with garnishes.

Notes

  • Use russet potatoes for best texture as they break down naturally creating creaminess.
  • For vegetarian version, use vegetable broth and omit bacon garnish.
  • Soup can be made ahead and reheated – flavors improve overnight.
