This hearty and comforting creamy hamburger potato soup is the perfect one-pot meal for busy weeknights. Made with ground beef, tender potatoes, and a creamy broth, this soup is both filling and delicious.

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups beef broth
  • 1 cup milk
  • 1/4 cup all-purpose flour
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 2 tablespoons butter
  • 2 tablespoons olive oil

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon. Remove and set aside.
  2. Drain any excess fat from the pot, leaving about 1 tablespoon for flavor.
  3. Add the butter to the pot and melt. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Sprinkle the flour over the onions and garlic, stirring constantly for about 1 minute to create a roux.
  5. Slowly whisk in the beef broth, making sure there are no lumps. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  6. Add the diced potatoes to the pot and simmer for 15-20 minutes, or until the potatoes are tender.
  7. Return the cooked ground beef to the pot. Stir in the milk, salt, pepper, and dried thyme. Simmer for another 5 minutes.
  8. Remove the pot from the heat and stir in the shredded cheddar cheese until melted and the soup is creamy. Serve hot.

Notes

  • Use russet or Yukon Gold potatoes for best results. Russet potatoes break down slightly and create a thicker broth.
  • For a richer flavor, substitute whole milk with half-and-half or heavy cream.
  • For a thicker soup, mash some of the potatoes against the side of the pot before adding the cheese.
  • Add vegetables like diced carrots or celery for extra nutrition and flavor.
